Zulis Beans

Zulis Spicy Turkey Pinto Beans

Dinner, Serves 40 (.5 cup or 70g serving size)

This is a great, easy to make (with your parents help) main dish that is umm umm good! Not to mention low in fat and chuck full of fiber. It is spicy, so if you like less spice reduce the chilis

INGREDIENTS:

  • 6 Tbsp Olive Oil
  • 2 Cloves Garlic Chopped (approx. 1 Tbsp.)
  • 1 Medium Onion Chopped (About 2 Cups)
  • 1 Tbsp Sea Salt or 2 Tsp. Regular Salt
  • 4 Serrano Chili's
  • 10 Dried Chili De Arbol (Stems Off)
  • 2 Tbsp Dried Chili Japones Chopped
  • Tsp. Ground Black Pepper (fresh)
  • 2 Quarts Water
  • 3 Lbs. Pinto Beans washed and soaked in cool water for 15 minutes)
  • 2 Lbs. Smoked Turkey Wings (rinsed off well)

HOW TO:

  • 1.In your favorite bean pot (should hold at least 8 quarts) add 4 tbsp olive oil and heat over medium flame
  • 2.Add salt and garlic, then stir
  • 3.Add serrano chili's, ground black pepper and saut' for 2 minutes
  • 4.Add dried chili's and saut' for another 2 minutes
  • 5.Add 2 quarts of water
  • 6.Add pinto beans (remember to wash the beans well)
  • 7.Add smoked turkey
  • 8.Bring to a boil, reduce heat and simmer for 2 hours. Stir every 20 minutes
  • 9.Stir in 2 tbsp olive oil and let simmer for another 30 minutes
